My daughter and SIL gave me their old Apple TV. Other than subscribing to the streaming services I want (e.g., Netflix), do I have to do anything to transfer the device to my Apple ID? Thanks!

No, but you should probably sign out of their accounts if they are still signed in anywhere and remove them where they are retained. It may be better to a full restore of the device. See Restore your Apple TV to its factory settings - Apple Support.
